The 'Selezione Cimarelli' Castelli di Jesi Verdicchio DOCG Riserva Classico is a white wine made from 100% verdicchio that goes well with elaborate salads and chicken dishes. After a manual selection at the end of September of the grapes, they are pressed with pneumatic presses to get the best of the must. The grapes come from Cru Coste vineyard of Cimarelli located 400m above sea level with a subsoil of clay and limestone. The grapes are fermented at controlled temperature after pressing and then aged in barrels for 9 months after which it matures in bottle for a further 9 months before it can be consumed. The wine has an alcohol content of 14.5% and a pale straw yellow colour. On the nose, the wine displays hints of straw, toasted almonds and caramel.
Cimarelli is a family business founded by Luca Cimarelli. The beautifully situated winery is located in Le Marche, where Luca and his family care for two grape varieties: Verdicchio and Montepulciano. The Cimarelli family stands out from other local producers due to their dedication to every step of the process. From planting to harvesting and pressing, this commitment is evident in the bottles from this lovely family estate.
