The 'Sirus' Rouge AOP Minervois La Livinière is an intense, garnet-red wine made from Grenache, Syrah and Cinsault, and is best paired with beef, couscous, grilled lamb and risotto.
Located on the foothills of the Montagne Noire and at the foot of the Cévennes massif, this wine estate is in the AOP Minervois La Livinière, in the heart of Minervois in the natural region of "Petit Causse." This appellation is one of the first crus of the Languedoc.
The wine comes from young parcels of the La Croix Martelle estate. Grenache, the winery's main grape variety, combined with Syrah and Cinsault, reveals a remarkable vibrancy with elegance, softness and flavours. Organic viticulture, since 1998, allows the wine to fully express the characteristics of the terroir.
On arrival at the winery, selected grapes of Grenache, Syrah and Cinsault are destemmed and vinified separately. The maceration in the vat lasts about three weeks, during which the temperature is strictly controlled (25-26°C). In November, the wines of each grape variety are tasted and the final blend is chosen. Sirus then matures for a year in the vat, where the tannins soften to produce a velvety finish on the palate.
Sirus has an intense garnet-red colour and expresses astonishing finesse with scents of spices, aromatics and incense. This elegance continues in a round, velvety, creamy palate with very soft tannins. Sirus is excellent with a piece of beef, couscous, grilled lamb and even with risotto thanks to its creaminess.
The wine comes directly from the winemakers, they send the bottles themselves.
