Solo Rosato - Rosato Lazio IGT is an authentic, everyday rosé wine, made especially for sharing. This wine, bottled in 1-litre bottles, is made entirely from 100% Ciliegiolo, from 50-year-old vines growing on volcanic soil with tuff and sand layers. The vineyards are at an altitude of 436 metres and enjoy a southwest exposure, which contributes to the freshness and aromatic intensity of the grapes.
The grapes are harvested manually in the early morning hours, carefully selected and transported to the cellar in small crates. Fermentation starts with a pied de cuve (a natural yeast starter) and takes place without temperature control. The maceration on the skins lasts 48 hours, which gives the wine a beautiful colour and extra structure. After fermentation, the wine matures for 11 months on fine lees in stainless steel, followed by a bottle ageing of at least 6 months. Unfiltered and unclarified, this rosé retains its pure and natural character.
Solo Rosato has a vibrant pink hue, an expressive nose of ripe red fruits and floral notes, and a fresh, juicy palate with a subtle spiciness. The wine is versatile and perfect with light meals, summer dishes and drinks. Serve chilled at 10-12°C and enjoy an artisanal and approachable rosé made to be enjoyed together.
