The 'Spessiàri' Dolcetto di Ovada DOC is a biodynamic red wine made from 100% Dolcetto that pairs nicely with pasta and stew dishes.
The wine is certified organic and biodynamic and less than 700 bottles of it are produced annually. The grapes for this wine were harvested by hand and carefully transported in small crates to ensure the highest quality. The yield per hectare was around 40 quintals, which resulted in grapes with beautiful balance and character. Fermentation of this wine is spontaneous and carried out exclusively with wild yeasts, without temperature control. This process contributes to the wine's unique flavour, and fermentation lasts as long as necessary. After vinification, this wine was aged for 12 months mainly in old tonneaux, which contributed to its depth and complexity. The alcohol content is 14%, with a refreshing acidity of 6.3 g/l and dry extraction of 29.4 g/l. The total sulphite content is minimal, just 10 mg/l. To fully enjoy the flavour, it is recommended to serve this wine at a temperature between 16°C and 18°C. The grapes for Spessiàri Dolcetto di Ovada come from vineyards located on the south side of the Rocca Grimalda hills, called Bernarda/Vallegrande, at an altitude of 300 metres above sea level. The soil consists of calcareous white soil. The first planting dates back to 2012. Made from 100% dolcetto grapes of the Nibiò biotype, this wine reflects the region's unique terroir and is a true expression of craftsmanship and passion.
