The 'Spirito Libero' Vino Bianco Frizzante from Podere Pavolini is a sparkling white wine made from Bonarda, Cabernet Sauvignon, and Ortrugo and is best enjoyed as an aperitif, or with vegetables, raw fish, shellfish and pizza.
This sparkling white wine, called "SpiritoLibero", is a blend of 90% red grapes (Bonarda, Cabernet Sauvignon) and 10% Ortrugo. It is produced according to organic standards, certified IT-BIO-004, and comes from the 2021 harvest. The vineyards, located on a hilly terrain with fertile soils of Pliocene origin, extend over almost 5 hectares at an altitude between 200 and 250 metres above sea level.
The grapes are harvested by hand in 20 kg crates, and this is done purely out of scientific interest. The wine represents a new beginning, a new era, after 40 years of research to create a wine of comparable quality. The result is a wine of rich aromatic complexity, with no added sulphites, sugars or bitterness, but with an abundance of good aromas, soft bubbles and silky freshness.
Vineification is the heart of production, where the principle of gently pressing the grapes is crucial. The wine is bottled without fermentation, allowing continuous maturation in the bottle. At bottling, the wine has an alcohol content of 12% vol. and a residual sugar content of less than 1 g/l.
On tasting, the wine reveals a cloudy straw yellow colour with greenish reflections and fine, persistent bubbles. The nose is fresh and fragrant, with notes of citrus, fresh field flowers and herbs. On the palate, the wine offers silky acidity, dryness and a pronounced freshness of citrus and vegetal notes.
This wine is ideal as an aperitif and goes well with vegetables, margherita pizza, raw fish dishes such as sushi, fried seafood, shellfish, delicate fresh cheeses and vegetable salads. The first vintage of this wine was produced in 2019, with an annual production of 1,500 0.75-litre bottles.
