Dolcetto d’Alba DOC BIO is a historic pride of the Langhe region and is often called “the wine of friendship.” This grape variety has been grown for generations on family vineyards and combines old vines over 35 years old with new clones. It is a wine with a strong personality, made from a demanding grape that does not like extreme heat, needs careful watering, and requires a well-timed harvest. These challenges result in a wonderful final product.
The winemaking is done in a pure way, with maceration for 6 to 8 days and repeated pumping over of the must. After the alcoholic fermentation, the malolactic conversion takes place in temperature-controlled tanks. The process includes some transfers, a resting period in stainless steel tanks until spring, and a first filtration. From mid-April, the wine ages in barrels with minimal sulfites and natural clarification, which keeps its authenticity.
The result is an intense ruby red wine with aromas of red fruits, cherries, and blackberries. On the palate, it is dry, lightly tannic with a subtle bitter note that softens over time into a harmonious and smooth taste without ever becoming sweet.
Dolcetto d’Alba DOC BIO goes well with a full meal but is especially good with fresh pasta with meat sauces or ravioli with butter and sage. Serve at room temperature in large glasses with a narrow opening to fully enjoy its rich aromas.
