Product description
This Bianco Lazio IGT is a pure expression of the Procanico grape, grown on volcanic soils with a top layer of sand and a subsoil of tuff. The vineyards, situated at an altitude of 436 metres with ideal southwest exposure, produce grapes with a distinct minerality and aromatic finesse. The vines, on average seven years old, produce a limited harvest that is carefully selected by hand and transported to the cellar in small crates.
Harvesting takes place in the second half of September, early in the morning to preserve the freshness and complexity of the grapes. A small part of the must is prepared five days earlier as a fermentation starter, after which the rest is added. After gentle pressing, the wine undergoes spontaneous fermentation without temperature control in stainless steel tanks. It then ages for 11 months on fine lees and at least 12 months in bottle, developing structure and depth. The wine is bottled unfiltered and unclarified, highlighting its authentic character and natural balance.
With an alcohol content of 13%, this wine has a lively freshness and subtle minerality. It offers a rich and complex flavour experience, with an elegant structure and a long, harmonious finish. Perfect as an aperitif or with refined dishes in which its pure, natural character comes into its own.
