This atypical red wine is made from 100% Bonarda grapes and undergoes a slow cold infusion to enhance varietal aromas without overpowering vinous notes. It is vinified to pursue maximum elegance without annoying tannin accents.
With a deep burgundy colour and ruby hues with a sparkling edge, this wine has an intensely floral and fruity aroma, with hints of raspberry, strawberry, aniseed, violets and wild rose. classified as Colli Piacentini DOC Bonarda, this wine is made from Bonarda Piacentina (Croatina) grapes, which are harvested by hand in 20 kg crates. After destemming and 60 days of cold maceration at 0°C, the wine undergoes daily delestage. After draining, fermentation begins in used oak barrels of the second passage, where the wine matures for 12 months before being stabilised and bottled the following autumn.
