Vino Ottenuto Da Uve Stramature Rosso, literally means Wine of mature grapes. This Passito Rosso from Giachino has an intense red colour and reveals enveloping aromas of raisined grapes on the nose. On the palate, it is aromatic and full-bodied, with perfectly balanced tannins and acidity and balanced by residual sugars.
The Passito method goes as follows: The drying of the grapes is done on mats or by hanging the bunches. The moisture loss gives the grapes so many sugars that only some of them ferment; the rest gives a delicious sweet flavour to the wine.
Also, the grapes are left to ferment for a long time.
