Product description
Vino Santo Trentino is the ultimate expression of tradition, patience and dedication. In the Valle dei Laghi, where man, vine, soil and climate come together in a unique way, the winemakers of the Pisoni family create, year after year, a masterpiece rooted in ancient customs. Only the very best bunches of the indigenous grape variety Nosiola, from old vineyards in carefully selected plots, are harvested by hand when perfectly ripe. These bunches are then placed on wooden racks - the famous "arèle" - and dried for months in the estate's attics. The constant airflow of the "Ora del Garda", the distinctive wind that blows from Lake Garda, ensures a slow and natural induration of the grapes, which are pressed only just before Easter.
After pressing, an extremely slow, natural fermentation starts due to the extremely high sugar concentration. This fermentation can last for years, resulting in a wine with impressive depth and longevity. The Vino Santo Trentino then ages for 9 to 10 years in a combination of acacia wood barrels and steel tanks, followed by bottle aging that can last for years, even decades. The result is a golden yellow wine with amber hues, an intense and complex aroma reminiscent of exotic fruit and honey, and a flavour profile that is exceptionally delicate, round and harmonious, with a powerful, persistent structure.
This wine is more than just a perfect end to a festive dinner: it is a living heritage of the Valle dei Laghi. Traditionally it is paired with dry pastries such as torta di fregoloti, but it also shines alongside long-aged mountain cheeses, blue cheese or foie gras. Vino Santo Trentino is an ode to the past, a gift to the present and a promise to the future - a precious gem that people are proud to look back on.
