Viva Bianco Lazio IGT is an expressive and authentic white wine made entirely from the indigenous Procanico grape. The vineyards lie on volcanic soil with a first layer of sand and tuff underneath, giving the wine a distinct minerality. The grapes are grown according to the Guyot system at an altitude of 436 metres and benefit from favourable south-westerly sun exposure. With an average age of nine years, the vines produce limited but high-quality yields.
Harvesting takes place in the second half of September, early in the morning to preserve freshness. The grapes are selected by hand and transported to the cellar in small 15-kg crates. Part of the harvest is set aside five days earlier to create a fermentation starter, after which the rest is added. After gentle pressing, the wine undergoes spontaneous fermentation without temperature control in stainless steel tanks. It then ages for 11 months on fine lees, adding depth and complexity. At the end of the summer, the wine is bottled with minimal residual sugar, resulting in a subtle natural pearlisation.
Viva Bianco is an unfiltered and unclouded wine, pure and vibrant, with a slight cloudiness that emphasises its artisanal character. Its fresh and mineral notes make it perfect as an aperitif or with light dishes. A tribute to the tradition and vibrant expression of the Procanico grape.
