The 'Zibimbo' Vino Bianco Zibibbo IGT Terre Siciliane is a white wine made from 100% Zibibbo that is best drunk with shellfish and pizza. The Zibimbo from Abbazia San Giorgio is a refined Vino Bianco with the unique flavour of Zibibbo grapes, grown on the enchanting terraces of volcanic soils on Pantelleria. This wine from the Sicilian sun has a vintage of 2022 and an alcohol content of 12% Vol. Production is limited to just 2,000 750ml bottles, making this an exclusive discovery for lovers of special wines. The vineyards, covering an area of 2.5 hectares, are on volcanic soils that tend towards loose composition. Poor in organic matter but rich in microelements, these terraced vineyards contribute to the unique characteristics of the Zibibbo grape. With an average age of 60 years, the Zibibbo grapes are grown using the traditional alberello pantesco method, recently recognised by UNESCO as an intangible heritage of humanity. The winery Abbazia San Giorgio embraces an eco-friendly approach with biodiverse farming techniques. This involves no chemical fertilisers or synthetic products, and no treatment is carried out in the vineyard. The Zibimbo emerges as a unique creation of the Zibibbo vineyards on Pantelleria. A specific pruning technique in spring encourages a second flowering, resulting in a late harvest in October. The grapes are harvested by hand, carefully pressed and undergo natural fermentation thanks to the yeasts present in the skins. After a short maceration period, the skins are separated, and after fermentation, the wine is transferred to mature in stainless steel tanks. The Zibimbo first ages for about eight months in stainless steel tanks, before being bottled and resting for another two months before being made available on the market. Enjoy the Zibimbo with all meals, but it particularly comes into its own with aperitifs with seafood, fish dishes, vegetables, pizzas and savoury pies. For the optimal experience of this Sicilian treasure, serve it at a temperature of 10-12°C.
